I'm thrilled to announce a brand-new recipe on the blog that will take your banana bread game to the next level—introducing Banana Sourdough Bread!
1½ cups ripe bananas
1¼ cups packed brown sugar
1½ tsp vanilla extract
2 large eggs
½ cup active/bubbly sourdough starter
2 cups all-purpose flour
1¼ tsp baking soda
½ tsp sea salt
½ cup neutral oil
¾ cup milk
1½ tsp cinnamon (or measure with your heart)
Preheat the oven to 360 F (don’t argue)
Butter one 9×5-inch loaf pan
Cream the bananas, sugar, and vanilla with a hand held mixer or stand mixer fitted with the paddle attachment, about 30 seconds to 1 minute
Add the eggs one at a time (good luck doing it any other way!)
Add the sourdough starter (Be sure to tell your starter what a great job she’s doing!)
Combine the flour, baking soda, and salt, then add it slowly to the banana/sourdough mixture
Add the milk and oil and mix just until combined (unless you like tough bread)
Pour into the loaf pan
Bake for 60-65 minutes, or until a toothpick comes out clean
Cool for 20 minutes, then tip the loaf pan onto a wire cooling rack
Slice and slather with Irish butter!
